MEATLOAF

 

馃 1. Classic Veggie‑Stuffed Meatloaf (Comfort + Color)

Ingredients

  • 1 ½ lbs ground beef (or beef + pork mix)
  • 1 egg
  • ½ cup breadcrumbs
  • ½ cup milk
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tbsp Worcestershire sauce
  • 1 tbsp ketchup

Veggie Filling

  • 1 cup spinach (fresh or thawed + squeezed dry)
  • 1 carrot, grated
  • 1 small zucchini, grated and squeezed
  • ½ red bell pepper, finely diced

Steps

  1. Heat oven to 350°F.
  2. Mix ground meat, egg, breadcrumbs, milk, onion, garlic, salt, pepper, Worcestershire, and ketchup.
  3. In a separate bowl, mix all the veggies with a pinch of salt.
  4. On parchment paper, flatten the meat mixture into a rectangle.
  5. Spread the veggie mixture in the center.
  6. Roll it up like a jelly roll, sealing the edges.
  7. Bake 55–65 minutes.
  8. Brush with extra ketchup or BBQ sauce during the last 10 minutes.

馃尳 2. Puerto Rican‑Style Veggie‑Stuffed Meatloaf (Island Soul)

Ingredients

  • 1 ½ lbs ground beef
  • 1 packet saz贸n
  • 1 tbsp adobo
  • 1 tbsp sofrito
  • 1 egg
  • ½ cup crushed crackers or breadcrumbs
  • ¼ cup evaporated milk

Veggie Filling

  • ½ cup corn
  • ½ cup diced sweet peppers
  • ½ cup finely chopped spinach
  • ¼ cup grated carrot

Steps

  1. Mix meat with saz贸n, adobo, sofrito, egg, crackers, and evaporated milk.
  2. Combine all veggies in a bowl.
  3. Flatten the meat into a rectangle.
  4. Add the veggie filling down the center.
  5. Roll tightly and place seam‑side down in a loaf pan.
  6. Bake at 350°F for 1 hour.
  7. Optional glaze: mix ketchup + a little brown sugar + a splash of orange juice.

馃 3. Cheesy Veggie‑Stuffed Meatloaf (Kid‑Friendly + Crowd‑Pleaser)

Ingredients

  • 1 ½ lbs ground beef or turkey
  • 1 egg
  • ½ cup breadcrumbs
  • ½ cup milk
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt

Veggie + Cheese Filling

  • 1 cup chopped broccoli (lightly steamed)
  • ½ cup shredded carrots
  • ½ cup shredded mozzarella or cheddar

Steps

  1. Mix meat, egg, breadcrumbs, milk, and seasonings.
  2. Mix broccoli, carrots, and cheese in a separate bowl.
  3. Flatten meat into a rectangle.
  4. Add veggie‑cheese mixture in the center.
  5. Roll up and seal.
  6. Bake at 350°F for 55–60 minutes.
  7. Broil the top for 3 minutes for a golden finish.
